Meatless Monday, introduced during both world wars to urge Americans to reduce meat consumption, was revived in 2003 by former ad man turned health advocate Sid Lerner. Lerner saw the prevalence of preventable illnesses associated with excessive meat consumption thus spearheaded a broad-based, grassroots movement that spans all borders and demographic groups. With an ever growing global population of schools, foodservice operations and restaurants going meatless on Mondays, improving health and reducing the carbon footprint is fast becoming hip and cool!
