Dark Chocolate + Seed Bark | Serves 8
I am not a huge lover of sweets so when I make something in this genre (which is rare) it typically includes tons of nuts and seeds. This creation was inspired by a recipe that I happened across and has the perfect combo of sweet, salty, crispy and chewy.
INGREDIENTS
1 cup unsalted sunflower seeds
1/2 cup hemp seeds, or flax meal
1/4 cup dark chocolate chips, Enjoy Life Foods has DF option
1/4 cup dried cranberries, or cherries
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 tablespoons coconut oil
1/4 cup honey
METHOD
1. Preheat oven to 300˚.
2. Combine all ingredients in a bowl and mix well using a wooden spoon or your hands. Once mixed, place on parchment lined baking sheet. Wrap your hand in another piece of parchment and press the “dough” evenly on the baking sheet until about 1/8” thick (it won’t cover the entire sheet, rather 75% of it). Bake for 10 minutes.
3. Remove from oven and place directly in freezer for 20 minutes. You can now break into brittle. Store in an air tight container in the fridge.
