Napa Cabbage Slaw | Serves 4-6

My cabbage of choice for any slaw is Napa. It’s light and airy, holds flavor well and is rich in nutrients (believe it or not!). I often make this slaw instead of the more traditional sort…

INGREDIENTS
6 cups Napa cabbage, trimmed and shredded
2 large carrots, julienned
DRESSING
1/4 cup extra virgin olive oil
1/4 cup brown rice vinegar
1 tablespoons Dijon mustard
3 tablespoons shallots, minced
1 tablespoon fresh thyme, minced
1/4 teaspoon salt

METHOD

  1. Trim top and bottom of cabbage (make sure to remove outer leaves). Thinly slice (shred). Place in large bowl. Add carrots and toss.

  2. In glass measuring cup (or small bowl), combine dressing ingredients.

  3. Toss dressing with vegetables.
