Cucumber Mint Salad | Serves 4

Super simple, super delicious, this dish is one of my most adored. It’s better day two than day one FYI!

INGREDIENTS
2 large seedless cucumbers, peeled, thinly sliced into rounds
1/4 cup mint, rough chop
1/2 cup lemon juice, fresh
1/4 cup extra virgin olive oil
1 teaspoon salt
fresh ground pepper, to taste

METHOD
Add all ingredients to a bowl and toss.
