Greens + Beans | Serves 4
This is a recipe from my book What The Fork Are You Eating. Super simple to make with canned beans, a great no-stress, packed with nutrition go-to! Eat as is or toss some sardines on top. I love this salad either way.
INGREDIENTS
1 15 ounce can white beans, drained and rinsed
1/2 avocado, medium cubed
1 small shallot, minced
2 tablespoons fresh parsley , rough chopped
1 tablespoon extra virgin olive oil
1/4 cup lime juice, fresh squeezed
1/4 teaspoon salt
4 cups arugula, loosely packed
METHOD
1. Drain and rinse beans in a fine mesh strainer; add to medium salad bowl and combine with all other ingredients except for the arugula. Mix well and pepper to taste.
2. Serve on a bed of arugula
