Dairy + Nut Free Pesto | Serves 8

I highly recommend a food processor for this recipe. While pesto is traditionally made with nuts and cheese, I pulled both out of this recipe for two reasons: My older son has a dairy allergy and I wanted to appeal to those who opt out of eating nuts. So here it is…

INGREDIENTS
2 bunches basil leaves, picked and cleaned
1 clove garlic
3 tablespoons extra virgin olive oil
1 tablespoon mellow white miso
salt, to taste

METHOD
Combine all ingredients in a food processor and purée until creamy. Serve on pasta, with rice, as marinade for fish, poultry or meat. Or, use as a simple dip for vegetables and crackers.
