Sesame Salmon | Serves 4
Salmon is literally one of my all time favorites. Though you will never catch me consuming the farmed sort (you can read about this in my book). I buy my salmon from Vital Choice where I can rest assured that wild and clean are #1.
INGREDIENTS
1.5 pounds wild Alaskan salmon
1 teaspoon salt, for cleaning fish
1 lemon, juiced, for cleaning
MARINADE
1/4 cup toasted sesame oil
2 tablespoons tamari
2 tablespoons fresh ginger, grated
COATING
1 cup sesame seeds, white, black or a combination
1 teaspoon salt
METHOD
1. Preheat oven to 350˚.
2. Clean fish with salt and lemon juice. Rinse under cold water and pat dry with a clean side towel or paper towel. Place in a medium bowl.
3. Add all marinade ingredients to the bowl and massage into fish. Let sit for 5-10 minutes.
4. Measure sesame seeds and salt onto a plate, mix well. Remove the salmon whole or in pieces from the bowl and coat front and back with sesame seeds. Place in parchment lined baking dish or on a sheet plan. Bake in oven for 10 minutes.
