Vegan Chocolate Mousse | Serves 4

I am not a lover of sweets, particularly chocolate, but…this dish literally blows my mind. With avocado as the base, it’s super rich and creamy yet not heavy like its dairy filled counterpart. I can appreciate if the “green cream” is off-putting, but I urge you to rise above and give it a try!

INGREDIENTS
2 large avocado, ripe
6-8 tablespoons maple syrup
1 teaspoon vanilla extract
2 tablespoons non-dairy milk
1/2 cup unsweetened cocoa
1/4 teaspoon coarse salt
1/2 cup fresh berries, for topping
1/4 cup walnuts, crushed, for topping

METHOD

  1. Add avocado, maple syrup, vanilla, non-dairy milk, unsweetened cocoa and salt to a food processor and puree until creamy.

  2. Divide mousse into 4 cups, top with fresh berries and crushed nuts.
