I am not a lover of cold pressed juicing. Why? Too much of the fiber is taken out and the “juice” aka “sugar” is left in. Not ideal for pre-diabetics or diabetics. That’s why I turn to my trusted high speed blender to mash a bunch of whole foods together to make the perfect morning drink. Welcome to a version of my Power Green from What the Fork Are You Eating…
INGREDIENTS
1 1/2 cups plain rice milk, or other milk (dairy or non-dairy)
1 cup kale leaves, loosely packed (or a large handful)
1/2 cup flat leaf parsley, loosely packed (or a small handful)
2" piece cucumber, if waxed, peel
1/2 apple, skin on
1/2 avocado
1/2 cup pineapple, frozen
1/4 " slice fresh ginger root, skin on
1 lime, juiced
METHOD
Combine all ingredients in a blender and purée until smooth.
